Historically we’ve added the Malvasia Bianca into the Primer Paso Syrah base a month or so before bottling. But as an experiment, we’ve done a few batches of Co-fermented Syrah-Malvasia. Tim did a 5 percent Ferment over at ASV, and I did a 10 percent ferment in my Bunker So far some pretty solid results. If it’s significantly different enough from the Primer Paso, I may reserve this barrel for the Velvet Slipper Club.
