The Nebbiolo on the Bonita Springs site is having a rough time getting color. And the Tannins are Not mild or Medium, but Spicy High. Did an early pick to thin the block. Hopefully this will allow the remaining grapes to gain some structure. Rather than just dropping the fruit we picked, we brought it back to the Bunker and did a gentle whole cluster pressing. Not many Nebbiolo Rose’s out there from which to seek guidance. So we dove off the deep end head first. 420 gallons worth of risk.
