Recently tasted one of my favorite Caduceus wines. A month after it was bottled I was pretty gun ho to share it with everyone. 5 months after bottling, something creepy happened. It had a stewed tomatoes character going on. HOLY SHIT! I freaked out, called my buddies to taste it as well, had Eric try it, Paula try it, etc. No need to panic. The wine is just going through a phase. We uncorked several, stuck the cork back in and tasted them over the course of 4 days. All good. The wine was much improved. That was quite a scare. I’ve heard of bottles going through some growing pains, but I had yet to experience it first hand in my own bottles. Learned something new this week.
