We picked up some additional Syrah from Lakeview. The sugar levels are a little high but the tannins have definitely come up compared to last weeks pick. I went ahead and de-stemmed these 50/50 with the Cab that came in from the same vineyard. Last year we did a co-fermentation with these grapes and had some good results. That single barrel that went into the SENSEI. This year we’ll easily have 4 times that amount.
