After the juice goes thru it’s primary fermentation it’s time to separate the juice from the skins.
The first way to do this is known as “free run.” We pump the free standing juice out from under the floating cap into a second bin. And then into a barrel. We then use the press to separate the juice form the skins. Sounds easier than it looks. Especially when the winery isn’t quite built.
